Ingredients:

1 cup rolled oats

1/2 cup nut butter (almond, peanut or cashew)

1/3 cup honey or maple syrup

1/4 cup ground flaxseeds or chia seeds

2 tbsp cocoa powder (optional for flavour)

2 tbsp Soulshine Spores mushroom extract powder (your choice of Rise & Shine, Balance & Flow or Innerbloom)

1/4 cup mini dark chocolate chips or cacao nibs

1 tsp vanilla extract

1 pinch of salt

Optional extras:  Shredded coconut, hemp seeds. maca powder, protein powder or chopped dried fruit

Instructions:

In a large bowl, mix all the dry ingredients, the rolled oats, flax or chia seeds, Soulshine Spores mushroom powder, cocoa (if using) and salt.

Stir in the wet ingredients: nut butter, honey or maple syrup, and vanilla. Mix until everything is well combined. Add a splash of water or almond milk if it’s too dry.

Fold in chocolate chips or other add-ins.

Scoop and roll into bite-sized balls (about 3cm in diameter).

Chill in the fridge for 20–30 minutes to firm up.

Store in an airtight container in the fridge for up to a week—or freeze for longer.
